Little easy baking for Today. Decide to share easy recipe that I don’t mind to make anytime.
Muffins :
I like them better cold, after they have been siting in the fridge for couple of hours.
It’s easy snack you can have anytime.
Also you can play with sweetness by either adding more stevia, or more chocolate chips or more strawberries.
If you think they have lots of fats, you can them by not adding cashews or almond butter to your recipe. Personally I don’t mind extra fat bc is coming from good sources like nuts seeds or coconut.
Chocolate chips are vegan gluten free, I use 4-5 chips for each muffin just to get little sweet kick.

Recipe: In bowl mix
150ml Almond milk (unsweetened )
50g Gluten free oats (Red mill)
30g Shredded coconut
100g Quinoa (Cooked)
50g Cashew (chopped/blended)
150g Strawberries (chopped)
30g Almond butter
1tbsp Stevia
1teasp Red beet powder
50g Vanila pea protein (Trader Joe’s)
When you have the mix done you be abble to make 6x100g muffins.
I add 4-5 chocolate chips to each one.
Bake 40 min on 350 °F (depending on how juicy you want them you can add easily another 5 min if you want them drier) serusahojnazdarcau
